The law against plowing with an ox and a donkey together is one of a list of forbidden mixtures, but every Torah law carries deeper meaning. A Maamar of the Maharash from 1867 traces this back to the Midrash about Shechem and Jacob, revealing how the ox (Israel) and donkey (the nations) represent fundamentally different spiritual categories that must not be mixed in the service of the Divine.
